We Be Jammin'

Today, I bit the bullet and put my jam where my mouth was and finally made Strawberry Vanilla jam.

I brought my assistant to the McCarren Park Farmers Market for 3 big ol' containers of strawberries and picked up a bunch of flowers, too.

Smart one here doesn't own a paring knife, so guess who spent the better part of an hour hulling the little berries with an 8" chef's knife?

The recipe was easy enough, but I bought a low-sugar pectin and that involved some slight changes. I also added only one vanilla bean and threw in a bit of vanilla extract. Who knows how it will taste.

Science!

The good thing is, there was only one casualty after the cooking-jars-in-boiling-water bit, which was lower than I expected. Here's to tasting it for once and all tomorrow.
